Celebrate the First Day of Spring with Blueberry Peach Lemonade

If anyone is ready for this crazy winter to be over, it’s ME! I’m so over this bitter cold and the piles of snow. I’ve been so looking forward to the first day of spring. It feels like 10 years have passed since winter started. And now, bring on the spring thaw!

As the world around me slowly begins to warm up and show signs of growth and bloom, I thought I’d commemorate the first day of spring by making Blueberry Peach Lemonade. Lemonade is such a refreshing drink anyway, ideal for springtime. Plus, it’s definitely one of my favorite drinks. I’d say that 9 times out of 10, when I go to a restaurant my drink of choice is some variation of lemonade, whether it’s plain lemonade or some flavored twist on lemonade.  

When I think about blueberry peach lemonade, I start drooling. It’s so sweet without being cloying and feels refreshing, light and renewed, just like I feel when I can finally walk outside without slipping on ice. It’s like a bouquet of spring flowers for the palate.

I made a simple syrup on the stove using fresh blueberries and then mixed my creation with fresh-squeezed lemons. Then, I added peach nectar for the final refreshing twist on this sublime spring delight. You’re in for a perfect spring pick-me-up with this one!

Blueberry Peach Lemonade
Ingredients

2 cups blueberries
1/3 cup sugar
10-12 lemons (2 cups lemon juice)
4 cups simple syrup
1 quart peach nectar
8 cups water

Directions

Blueberry Syrup
1. Put blueberries, sugar and 1/4 cup water in a saucepan and bring to a boil.  Stir constantly, reduce heat and simmer about 20 minutes until thick.  
2. Strain the blueberries through a fine-mesh strainer. Using the back of a big spoon press the blueberries to get all of the liquid out.  Chill the blueberry syrup.  

Lemonade
Juice lemons, mix with simple syrup, add the peach nectar and blueberry syrup.
Stir in 8 cups of water.  Serve

Makes a little over a gallon
