Pineapple Watermelon Daiquiri

 I know watermelon season is just about over, but why not give our favorite summer fruit the proper send-off? Go grab one before they’re gone because my Pineapple Watermelon Daiquiri is just the thing you need to give summer the ultimate goodbye kiss, before you rustle up those fall sweaters and jump into the land of pumpkin spice.

 This drink came about as a bit of a happy accident. My cousin threw a party at her house the other night. Once it was over, she had a ton of watermelon leftover. “What am I going to do with all of this watermelon?” she asked me. It really was a lot of watermelon!

 But I took one look and I knew what to do. “Why don’t you soak it in vodka and then make it into a drink?” That seemed to give her some ideas, but it also gave me some too. As I headed home, I thought to myself that I now needed a watermelon. You know me. I had my plan!

 The next day, I picked up a watermelon and cut a little less than half of it and soaked it in rum. I didn’t have any vodka on hand and rum is just as good an option for soaking in your watermelon. I let it soak for about 3 hours, then I put the watermelon in a gallon-size Ziploc freezer bag and stuck it in the freezer overnight. 

 See, my plan was to make frozen daiquiris and by freezing the watermelon, I made my next step so much easier. Freezing my rum-soaked watermelon meant that I didn’t have to add ice to it and water down my alcohol content.

 The next day once it was good and frozen, I blended the rum-soaked watermelon with a one-pound bag of frozen pineapples, some pineapple juice, a little more rum, the juice of both 1 lemon and 1 lime, plus a little simple syrup for sweetness and a little watermelon daiquiri mixer to bring out the watermelon taste a little more. I’m telling you, it was good. You’re going to want to make this before the water gets too chilly at the pool. Hurry! Grab the last watermelons today and make this for one last backyard barbecue or pool day before pumpkin everything is here!

Ingredients

1/2 cup fresh lime juice – about 2 limes
1/2 cup fresh lemon juice – about 2 lemons
8 cups of diced watermelon
1 pound bag of frozen pineapple
2 cups rum (1 cup dark, 1 cup light)
1 cups simple syrup
1 cup pineapple juice
1 cups watermelon daiquiri mixer

Directions

Dice watermelon and place in a large ziploc bag.  Pour rum in the bag and soak watermelon for 2 hours. 

Transfer bag to the freezer and freeze for about 6 hours to over night. 

Remove frozen watermelon from the freezer and place in the blender. 

Blend the frozen watermelon with the remaining ingredients, fresh lime juice, fresh lemon juice, frozen pineapple, simple syrup, pineapple juice and watermelon daiquiri mixer. 

This recipe can be enjoyed as a frozen drink or if you would like to take it one step further turn it into a sorbet by putting it in your ice cream maker.  Freeze the mixture according to your ice cream maker’s directions.
