Easy Homemade Strawberry Jam

Did you guys miss me? I’m sorry that I’ve been MIA for the past few weeks.  I don’t think I ever shared this in any of my posts but I’m currently in school completing my Masters of Early Childhood Education.  This is the home stretch, and I’m about a week away from finishing up school. WHOOO!!!! 👩🏽‍🎓

It’s been a bit stressful in these last few weeks as my program comes to an end.  I couldn’t wait to get back in the kitchen to whip up something delicious.  

There was a Strawberry Festival about 2 weeks ago in Fort Mill, SC. The 🍓Strawberry Festival is Fort Mill’s way of saying Hello Spring while enjoying homegrown strawberries. Jeremy and I talked about going, we had plans to go, but we missed it.  🤦🏽‍♀️  So the festival lasted for a week.  The weekend it ended, we thought it would last the entire weekend.  We had plans on the Saturday and couldn’t go but we wanted to go on Sunday.  Sunday morning I got up, and was like lets go to the Strawberry Festival.  Sadly we learned that Saturday was the last day… We missed it by a day… 😖😫We still wanted strawberries, and I was determined to make something with them.  We got in the car, and drove to BJ’s for some Strawberries. 😂🤣

When I got home I rinsed the strawberries and cut the tops off of them. Next I cut them in quarters, and added them to a pot with all of the ingredients except the fruit pectin.  I bought the pot to a boil over medium heat, and then removed the pot from the heat, to allow the ginger flavor to really infuse into the strawberries. Finally I put the pot back on the stove and bought the pot to a simmer, added fruit pectin, and raised the heat. I cooked the strawberry mixture for about 10 minutes and removed the pot from the heat.  The mixture will still be quite watery looking, but the jam will thicken as it cools.

Easy Homemade Strawberry Jam

Ingredients
4 cups strawberries (quartered) about 2 lbs
1 cup sugar
1 lemon juiced and zested
1/2 inch ginger
1/2 cup water
3 tbsp fruit pectin

Directions 

  1. Add 1/2 cup water to a sauce pan along with strawberries, lemon zest, lemon juice, ginger and sugar.  Stir and bring to a boil.  
  2. Remove from heat, and let ginger infuse in the strawberries for about one hour.  
  3. Bring the pot to a simmer, and smash strawberries a little bit.  Add 3 tbsp of fruit pectin and bring to rolling boil over medium heat.  Stir consistently for about 5 minutes and reduce heat to low.  Remove from heat and cool the strawberry mixture.  The mixture will still be quite watery looking, but as it cools it will thicken.
