Gingerbread Popcorn

I love popcorn. It’s the perfect snack, isn’t it? Kettle Corn is my favorite because it’s a little sweet and a little salty all at once…Yum! When I don’t have Kettle Corn, one of my favorite things to do is put a little molasses on my popcorn. Oh trust me, it’s amazing!

 My family had a gingerbread competition for Christmas this year, and I bought some molasses to make my gingerbread. Ever since I bought the molasses though, I’ve had a taste for my favorite molasses-covered popcorn.  Last week after making some gingerbread cookies, I was just getting ready to make some popcorn and pour some molasses on it. I noticed that I had ginger, cloves, allspice and cinnamon on my counter – all the spices I used to make my gingerbread cookies.

My lightbulb went off and I decided to shake some on my popcorn along with the molasses. Let me just tell you…it was SO good! It tasted just like a gingerbread cookie but with that popcorn crunch. It’s the perfect crunchy and sweet snack for this time of year!

Gingerbread Popcorn
Ingredients

1/2 cup popcorn kernels
2 tbsp oil (I used coconut oil, but any cooking oil will work)
1/4 tsp salt
2 tsp ginger
1 tsp cinnamon
1/4 tsp allspice
1/8 tsp cloves
1/2 cup molasses

Directions
Mix, ginger, cinnamon, allspice, and cloves in a small bowl.
Heat oil in a sauce pan on medium heat. Add salt to the oil.
Add a few popcorn kernels to the oil.
Once those popcorn kernels pop, add the rest of the kernels to the oil.
Cover the pot, and allow popcorn to pop.
While the popcorn is popping, shake the pan, and remove the pan from the heat, and move it back to the heat every so often, to ensure more popcorn kernels pop.
When the popcorn slows to several seconds between pops, remove the pan from the heat.
Place molasses in the microwave for about 30 seconds. (This helps to pour it easier)
Spoon half of the popcorn into a bowl, season to taste with gingerbread seasoning, pour some molasses on the popcorn, spoon the rest of the popcorn into a bowl, season to taste with gingerbread seasoning, add some more molasses.
