Blackberry Peach Ginger Ice Pops

Did you guys miss me? My apologies that I’ve been a bit MIA on the blog because my husband and I recently relocated to Charlotte, NC.  I’d been complaining that the weather in NY was always crappy with lots of rain and a bit too chilly for my liking.

Now that we’re in NC, it’s a world of difference. I decided to celebrate by embracing our new home and the summer by making something nice and cool. I make Blackberry Peach Ginger preserves which are delicious on everything from toast to your fingers, and it got me thinking that this flavor combination might also do well in frozen form.

I made ginger simple syrup by using ginger tea. In a separate pan, I added the blackberries with about a 1/4 cup of water. I cooked the blackberries and mashed them. Then I added the simple syrup to the blackberries, some crystalized ginger, and cooked it a few minutes longer.  I chopped up about 2 cups of frozen peaches and added it to the blackberry mixture, and poured it into the ice pop molds. 

Honestly, the only difficult part of this recipe is the waiting. As Tom Petty famously sang, “the waiting is the hardest part.” But once they are frozen, you have these incredibly delicious, completely refreshing ice pops that I think symbolize my new city quite well. They’re sweet without being cloying and the ginger adds a bit of distinction to them that I know you’ll love. Plus, the chunks of peach are a nice surprise as you eat them, giving a delightful texture to really make these pops pop.

Blackberry Peach Ginger Ice Pops 

Ingredients
1 1/4 cup of Ginger Tea Simple Syrup
12 oz blackberries
1/2 cup chopped crystalized ginger,
2 cups frozen peaches
1 tsp nutmeg

Directions
Chop the frozen peaches. 
Add 1/4 cup water to a sauce pan, add blackberries. Cook the mixture over medium heat.
When blackberries begin to soften mash them with a potato masher, and remove from heat. 
Add nutmeg, crystalized ginger, and ginger simple syrup. 
Add chopped peaches. Spoon the mixture into ice pop molds, leaving a little bit of room at the top for the mixture to expand. Insert sticks and freeze

Ginger Simple Syrup
1 1/4 cup water
1 ginger tea bag
1 cup sugar 

Directions
Bring water and sugar to a boil.
Add ginger tea bag, and let steep for 3-5 mins.
