Pecan Cobbler

Near my house, there’s this fantastic restaurant that has a dessert I simply can’t resist. As you know, we’re getting to know our new area in North Carolina and exploring the restaurants here is part of the fun. When it came time for dessert and I saw Pecan Cobbler on the menu, it just sounded amazing. And I know why. Because it IS amazing!

Ever since, I’ve been telling everyone about that incredible Pecan Cobbler. I’d even ask my husband to meet me there for a lunch date so I could splurge on that Pecan Cobbler again. And yes, when anyone comes to visit us from out of town, I’ll take them there just so I can get more of that Pecan Cobbler and let them taste what they’ve been missing.

Yes, I’ve been raving about that Pecan Cobbler so much, you know what I had to do. I had to make my own. Oh and now I’m in trouble because I’m going to make this every day. It’s basically the best of what you love about cobblers and pecan pie melded into one lusciously delicious dessert.

If you love pecan pie, you’re going love my Pecan Cobbler, but you should know that it’s not bound together inside a crust. It’s this rich, buttery, gooey delight that only gets better with a scoop of creamy vanilla ice cream on top. You won’t be able to stop eating this, I just know it!

Pecan Cobbler

 Ingredients
3 cups Chopped Candied Pecans
1 cup corn syrup 
3/4 cup maple syrup 
1/2 cup melted butter 
1/2 cup sugar 
1 tbsp vanilla extract 
4 eggs 
2 oz bourbon 
1 tsp salt 
1 tsp nutmeg
Store bough roll out pie crust

Directions
Preheat oven to 350 degrees. 
Spray a glass pie dish with cooking spray. 
Cut your store bought roll out pie crust so it fits perfectly on the bottom of your pie dish. 
Beat eggs in a stand mixer using paddle attachment.  Add melted butter, maple syrup, corn syrup, sugar vanilla, bourbon, nutmeg and salt.   
Add candied pecans.
Pour pecan mixture into the pie dish.
Bake for 50 to 55 minutes or until center is set. Let cool 20 minutes. 

Candied Pecans

Ingredients
3 cups pecans 
3/4 cup brown sugar 
4 tbsp melted butter 
2 tbsp bourbon

 Directions

Place your pecans in a food processor and pulse until your pecans are coarsely chopped. 
Place chopped pecans, brown sugar, butter, and bourbon on a sheet pan.
Bake in the oven for 10 minutes.
