Pina Colada Donuts

As I mentioned recently, my husband and I relocated to Charlotte, NC. I’m still finding my way around, and haven’t found my go-to donut place yet. I thought that until I do, I’d better make some of my own before the craving for donuts drives me insane. So, I created these Pina Colada Donuts.

It’s really a match made in heaven for anyone that loves Pina Coladas (which is everyone, right?) and anyone that loves donuts (again, that’s everyone, right?). I used my Pina Colada recipe from that amazing Pineapple Upside Down Bread Pudding recipe I shared with you a couple months ago, though sans pineapple juice. Instead, I made that Pina Colada into a custard so I could inject them into my donut creations.

I used my food processor to make a coconut sugar using sugar and shredded coconut. Then I rolled these great balls of donuts into the coconut sugar. My final step was injecting them with the Pina Colada custard. My house smelled amazing, and I’m pretty sure my husband floated on the air into the kitchen as he inhaled the delightful aroma. Even better than the smell of these donuts was the taste. Make them now for your breakfast or a sweet afternoon treat!

Ingredients

1 tbsp butter
2/3 cup sugar
2 eggs & 2 egg yolks
1 1/2 cup flour
1/4 cup coconut milk
1/4 cup milk
1 1/2 tsp baking soda
1/8 tsp salt
1 tsp vanilla extract
1 tsp coconut extract
Pina Colada Filling
Coconut Sugar

Directions

Combine butter, sugar and egg yolks.
Stir in milk and vanilla. Sift dry ingredients together and blend into egg mixture. Drop batter from spoon into deep fryer for 2-3 min.

Pina Colada Filling
1/4 cup of cream of coconut
6 oz coconut milk
1 cup of Pina Colada mixer
2 egg yolks
1/4 cup sugar
1/4 cup cornstarch
1 tsp coconut extract
1/4 cup of coconut rum
1 tbsp butter
1/4 cup milk
 

Directions
Add the pineapple juice, coconut milk, Pina Colada mixer, cream of coconut, egg yolks sugar, cornstarch and coconut extract to a round-bottomed saucepan off the heat and whisk together until the mixture is smooth and the cornstarch has dissolved.

Place on medium heat and bring to a simmer, whisking constantly while it thickens. Once thick like pudding, remove from the heat and stir in 1 tablespoons butter, coconut rum and milk.

Coconut Sugar

Ingredients
1/2 cup coconut flakes
1/2 cup sugar

Place sugar and coconut flakes in the food processor and process until the sugar and the coconut is well incorporated
