Pear and Pomegranate Cobbler with Sweet Red Wine Reduction

This pear cobbler is super easy, and absolutely delicious. It’s packed with juicy chunks of sweet pears, and tart pomegranate topped with a crumbly crust.  Serve this with the sweet red wine reduction and it won’t disappoint.

Pear and Pomegranate Cobbler with Sweet Red Wine Reduction

Description

This Pear and Pomegranate Cobbler recipe is extremely easy to make from scratch. It’s packed with juicy chunks of sweet pears, and tart pomegranate topped with a crumbly crust. Serve this up with a drizzle of the sweet red wine reduction, and it will take the cobbler from great to amazing.


Ingredients

Scale

3 pounds bosh pears (5 large pears) peeled cored and sliced
2 cups pomegranate arils
1/4 cup sugar 
1/4 cup brown sugar 
1/4 tsp cinnamon 
1/4 tsp nutmeg
1/8 tsp allspice 
1/8 tsp ground cloves
1 tsp lemon juice 
1/2 tbsp vanilla extract
4 tbsp corn starch 
Nonstick cooking spray

Crust Ingredients  
1 cup flour
2 tbsp sugar 
2 tbsp brown sugar 
1/2 tsp salt 
6 tbsp unsalted butter, chilled and cut into pieces 
1/4 cup water 


Instructions

  1. Preheat oven to 400 degrees 
  2. In a large bowl combine pears, sugar, brown sugar, cinnamon, nutmeg, cloves, allspice, lemon juice, and vanilla extract.  Mix well, add pomegranate arils and corn starch. 
  3. Pour mixture into a greased 9×13 inch baking pan.  
  4. In a large bowl combine crust ingredients; flour, sugar, brown sugar, and salt.  Blend in butter with your fingers until the mixture resembles a coarse meal.  Stir in water until.  
  5. Drop spoonfuls of topping over the pear and mixture.  Bake 30-40 minutes.
